easy ‘anything’ scrolls

My tribe eats a fair bit. they seem to be “staarving’!
These are a a firm favourite in our house – often whipped out for an after-school snack, lunch-box lunch, or a weekend lunch!

INGREDIENTS:

  • 300g lukewarm water
  • 1 sachet yeast
  • 1tsp salt
  • 20g oil
  • 500g bakers flour (we use Laucke)
  • 1 tsp chia seeds (optional)

METHOD:

1.Add ALL of the ingredients (in the order listed) to the Thermomix, whiz on SP5 for 5sec (if no TMX – bung it all into a big bowl and mix!)

  1. Set TMX to KNEAD for 2:30, then give a little extra hand-kneading love on a floured bench! (or – knead by hand until dough is elastic)

  2. Throw it all in a big bowl covered with cling wrap, and set in a warm place for a good 40-60  minutes (or until the dough doubles its size)

  3. Punch down (so satisfying!), and divide dough into two.

  4. Roll out to approx 1cm think

  1. Spread any fillings you desire! We LOVE vegemite/cheese, pizza (ham, cheese, tomato paste, oregano), nutella or apple/cinnamon.

  2. Roll into a log, and cut into ‘wheels’.

  3. Place onto a tray – leave a gap between each.

  4. Do the same with the other half of dough (I use a different filling!)

  5. Leave tray to rise again (makes the scrolls fluffy, airy and BIGGER!)

  1. Place in 150’C oven for 20 minutes (note – I am using a tiny ‘complex and frustrating’ oven – so yours may differ!)

  1. Cool on a wire rack (so the bottoms don’t get soggy from the cheese!)

  1. Enjoy!

I LOVE that they are super flexible – we just fill them with ANYTHING!
